My Texas Snowman

He's so cute, oh why snowman did you come to Texas. This guy is Chocolate, Vanilla and Butter Golden cake with  Vanilla buttercream icing.
I also did tootsie roll for the arms and a baby carrot for a nose.

Eggnog Cupcakes

Very easy eggnog cupcakes! Very good too! You can make them with rum extract or with Rum.

Baking Cups
1 ½ cups sugar
½ cup butter, room temperature
3 eggs
1 cup eggnog
1 teaspoon vanilla extract
1 teaspoon rum extract for cake
2 ¼ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon allspice
¼ teaspoon nutmeg

1 cup vanilla pudding
½ teaspoon rum extract for filling
Pastry bag & Injection tip

1 package cream cheese, room temperature
2 cups confectioner's sugar (1/2 of a 1lb box)
1 stick (1/2 cup) butter, softened
1 1/2 Tablespoon eggnog
1/2 Tablespoon rum extract for frosting
1/2 teaspoon nutmeg
Optional: Cinnamon Sticks

Instructions:

PREHEAT oven to 350 degrees Fahrenheit.  Put baking cups in muffin pans; set aside.
MAKE CAKE
  1. Beat sugar and butter together until combined. 
  2. Add eggs and beat until blended.
  3. Combine wet ingredients in one bowl: eggnog, vanilla, and rum extract. 
  4. In a separate bowl, combine dry ingredients: flour, baking powder, baking soda, cinnamon, allspice, & nutmeg.
  5. Alternate adding dry & wet ingredients into blended butter sugar and eggs until well combined.
  6. Scoop batter into baking cups. Use an ice cream scoop or pipe from a zipper freezer bag in order to fill evenly.  Be sure not to overfill the cups.
  7. Bake for 20 minutes at 350.  Let cool completely.
PREPARE AND INJECT FILLING INTO CUPCAKES
  1. Mix rum extract into vanilla pudding. 
  2. Fill pastry bag with injection tip and pudding mixture.
  3. Inject filling into center of each cupcake.
MAKE FROSTING
  1. Beat cream cheese and butter together until well blended. 
  2. Add powdered sugar. 
  3. Add eggnog, extracts, & nutmeg.
  4. Sprinkle with nutmeg and top with cinnamon stick if desired

Pirate Cake

Ahoy! Shipmate's follow the map and get the sweet yummy treasure. 

This white cake was ordered for a 7 year old Birthday Party
Sad to say No one got to eat it tho, When the mother got home from picking it up she dropped it on the floor.

 This pipped treasure chest took about an hour to do and turned out great.

On the sides I did a treasure map and added random 7's because the Birthday boy was turning 7.

D and D players handbook

Here's a D and D players handbook I  did for a good friend of mine. We get together twice a month and play and thought we would dig it.
I did a Norwegian Gold Cake with homemade strawberry  raspberry jam in the center. The icing is my classic buttercream. I think with this cake tho you should do a sour cream base icing. But all in all it was great.

Sock Monkey

This little 6inch smash cake was ordered for a 1 year old. It was Banana with cream cheeses icing. I was not happy with the monkey but my friend loved it and so did her son as he tor into it.
To make the argyle print I used a diamond shaped cookie cutter and just pipped on the color.
For the Guest at the party I made banana cupcakes with chocolate buttercream and cream cheese icing. My friend then made very cute Cupcake toppers.

Riesin's Classic

Yummy! I thin I over dosed on chocolate covered caramels on this one. It's my classic white with vanilla buttercream. on top a made a pattern with a old candy called Riesin's they been around a long long time. My granny always had them. Then I added some chocolate Buttercream for some boarder.

Death by Chcocolate

This cake was Devil's Food with Chocolate Butter cream filled with chocolate. I Just did a Simple  cross pattern on the top and add and few white dots and the sides and top.

Get the Kids in the Kitchen


It's summer time and what do you do when its to hot for the kids to go outside. Well, I say put them to work in the kitchen.


What you can do is teach them how to use the Measuring Cups and spoons. Plus, little ones love to mix.
After putting them in the oven give them the timer and say when it sings they will be done.

They love it. My little ones are still to little to frost but have fun with it.

We made Chocolate with Chocolate Buttercream.

Cake Pops


Cake Pops, I find they can be dry or too sugary. They are a great idea tho for your cake scraps. I think im going to start keeping my scraps and making them.

Cake Ball Mix

What you need
1 batch Dark Chocolate Cake
8 ounces cream cheese, softened
2 cups confectioner's sugar
4 tablespoons butter
1 tablespoon milk (or more, as necessary)
Bake the cake and let it cool completely on a rack. This is a very moist cake, which is ideal for this recipe. It's best to let it cool overnight at least. When it is completely cool, break the cake into a large bowl. Crumble it with forks or your fingers until it is in fine crumbs.
In a separate bowl, whip the cream cheese, butter, powdered sugar, and milk together until smooth. Pour into the cake crumbs and mix with a spoon. Then continue mixing with your fingers, kneading and mixing until fully incorporated into the cake. Check to see if it will roll into a ball. It should: this makes a very malleable, easy-to-handle cake mixture. But if it needs a little extra moisture, add milk a spoonful at a time.
When the mix is completely done, cover with plastic wrap and refrigerate until firm. You can leave the mix refrigerated for several days at this point. I left mine in the fridge for about three days before making the balls. You could probably also freeze this.

Spiderman



This was a crazy day in the kitch. I put the first cake in the oven and  5 mins later I have one of the worse  seizure I have ever had. But after I came too and sleep for two hours back to cake I went. I pipped all the black that night, I had the shakes so bad I had to stop.
The next morning I was still shaking but with a number 1 tip and very slowly I got it down.



This cake it Half vanilla half chocolate. I used 2 10' pans. The icing is Buttercream.

Kosher Wedding Cakes

This Cake was a stressful one but fun. Cooking in a different kitchen is always a challenge for me. They turned out great tho. The Brides cake is 6 White cakes with Butter cream icing and purple fondate roses.


I would of loved for the icing to be more smooth but for some reason it was not working out of me and the bride said she liked it this way.

The Grooms cake, yes it is a companion cube from the video game portal. Its red velvet with cream cheese icing and man it was good.

Kosher Wedding Cakes

So, 328 miles later and we meet a a H.E.B one of the biggest food chains I have ever seen. Let me just say finding unsalted butter is a change. After finding everything I need I head to a kitchen that I have never seen and start baking. Let me say baking in  Midland Texas is a lot different then Denton Tx, yes you say Texas is Texas, oh no it is not. Texas has so many different climate its a little crazy. Here in Midland there is no humidity and My cakes don't rise as much and my frosting is not quit working out. But will the happy couple have a fab wedding cake and groom's cake YES they will. Cakes are baked and crumb icing is done. Tomorrow icing and decorating starts. Wish me luck and the next time I post will be the cakes.

Chew which is my Fav. Is chocolate cake with chocolate butter cream icing. All three cakes I used my 10 inch pan.

During transport of the cakes I lost the R2D2 cake. He is my first casualty.
